Plant based lipid alternatives in infant nutrition

The presentation will focus on the development of modified, lipid products for use in infant milk formula manufacture. Human milk fat has a unique structure that promotes the digestive health of infants. Bovine milk and vegetable oils, when combined, provide excellent substrate materials for lipase-induced, structural modification. Nutritional enhancement of such blends offers significant potential in the development of human milk fat substitutes and the exploitation of growing markets for infant milk products.
